Aqua ad 100g < BR/> When I add Tween 80 at the water-phase (which seems to me the most logical), my emulsion is too liquid; I add the Tween at the fat phase then I have a good consistency. Can I add the Tween to the fat phase and what is the explanation for this determination?

You can easily add the Tween to the fat phase. As an explanation for your phenomenon I only see one possibility and this is that by adding the Tween 80 to the fat phase a phase reversal occurs during the onset of the emulsion. After all, Cetomacrogol is not a so pronounced O/W emulsifier while Tween 80 is it. Phase reversal gives rise to better emulsion formation.
